Broiled Breaded Pork Chops
2 thick pork chops
2 eggs
6 Tbs. sifted bread crumbs
Salt and pepper
2 Tbs. olive oil
3 Tbs. melted butter
Juice of 1 lemon
1/4 cup grated Parmesan cheese
1 Tbs. prepared mustard
1 Tbs. finely chopped garlic
Dash Tabasco
Dip chops into beaten eggs, then into bread crumbs; do this twice. Then sprinkle a little salt and pepper over the chops. Preheat broiler. Place chops in a lightly greased broiler pan 8 inches from the source of heat. Broil slowly for 10 minutes.
Mix all other ingredients to make a basting sauce. Spoon half the sauce over the chops. Cook slowly for 20 minutes longer. Turn chops over and spread reaming sauce over them. Cook slowly for 30 minutes more. Check for doneness.
Serve with pasta.
