Oven-Roasted Baby Bliss Potatoes

Ingredients: 

24 red potatoes about the size of a golf ball, cleaned
1/4 cup olive oil
1 tablespoon kosher salt

Directions: 

1. Place the potatoes in a metal bowl.
2. Pour in the oil and toss to coat.
3. Sprinkle with the salt and toss again to coat evenly.
4. Place the potatoes on a cooling rack set inside a jelly roll pan (or cookie sheet with sides) in the center of the preheated 400ºF oven.
5. Roast for 20 to 25 minutes, until tender.

The potatoes are done when the skin puffs slightly and the potatoes are very soft in the center. Serve immediately.
