Bruschetta

Time to Prepare: 
30 minutes
Ingredients: 

1 lb. tomatoes, chopped small
2 cloves chopped garlic
1 Tbs. olive oil
salt & pepper
1 1/2 Tbs. balsamic vinegar
1/8 c. orange juice
1/2 can black olives
1/4 c. fresh basil, chopped
Ciabatta bread

Directions: 

Place all ingredients except basil and bread in a food processor. Pulse just a few times quickly to desired texture. The consistency should be finely diced, but NOT smooth.

Stir in chopped basil.
Drain extra liquid before serving.

Slice chiabatta. Can be served either plain, or brushed lightly with oil and baked a few minutes.
