Chicken Fricasee with Turkey Meatballs
1 pound ground turkey
1 small potato, grated
3 tablespoons bread crumbs
1 egg
3 cloves garlic, chopped
2 tablespoons oil
2 medium onions, chopped
2 tablespoons paprika
2 tablespoons brown sugar
1 tablespoon lemon juice
1 cup red wine
1 10 ounce can tomato sauce
1 whole chicken, cut up salt & pepper
1. Combine turkey, potato, bread crumbs, egg, 1 clove garlic, salt and pepper.
2. Shape into walnut size meatballs and set aside.
3. Heat oil in large pan and cook onion and garlic until transparent.
4. Stir in paprika and saute 2 minutes, stirring constantly.
5. Add tomato sauce, wine and season with salt and pepper.
6. Add lemon juice and brown sugar to taste and cook for 1 minute.
7. Place chicken, giblets and meatballs in sauce. Cover.
8. Simmer gently for 1 hour. Shake pot every 15 minutes to avoid sticking.
Serve with Mushroom Barley Casserole.
